s Potato Soup s   


Mom's Potato Soup. I don't know how many servings it makes. You need to make it with cornbread (Jiffy), crumble the cornbread and mash the soup up in it. One of my 2 top comfort foods (the other is chicken & dumplings)
Yields: 4 Servings


Ingredients

1 ounce Butter
3 large Baking potatoes peeled
1 dash Paprika
2 cups Milk
2 tbs cornstarch
1/4 teaspoon Salt
Pepper, black to taste


 
Instructions
Peel potatoes and slice about 1/2" thick. Place in sauce pan and cover with water. Heat to boiling. Add about 1" of a stick of butter or margarine and 1/4 tsp of salt. Cover and simmer until potatoes are done. Add milk. In a cup, mix cornstarch (about 2 heaping tbsps) with water to form paste. Add mixture to potatoes for thickening. Season with salt, pepper, and a dash of paprika. You may also boil onion or pepper with your potatoes for flavoring.

Note from Larea: if you cut the potatoes smaller, it cooks faster. I have no idea how much milk I put, I just pour some in until it looks right. If I figure it out, I'll update this.
